1. Maai

An airy, open space in the bylanes of Assagao, Maai is the perfect juncture between Old and New Goa. The happier elements of New Goa shine through–a fun, millennial crowd, food that’s interesting without being try-hard (we love the crispy calamari and the edamame hummus, with the spiced apple, cranberry and roasted pecan tart for dessert) and a series of craft cocktails to go with. The ideal first stop on a long, bar-hopping night about town, providing both setting and fuel for the evening ahead.

Set on a rooftop in Panjim that has a phenomenal view–of the cerulean sea by day and the glittering city lights by night–the PCO Group’s Raki was intended for locals–exactly the kind of place that floats our boat. The Middle Eastern fare does well (the mushroom Pide and array of pita accompanying dips in particular), but the cocktails are the star, with the house’s new Pure Agave Spirit Pistola working its way into a range of experimental mixes. Ideal for a night that you can’t face the tourist crowds of Anjuna and Vagator, but aren’t willing to lose your evening to a lacklustre vibe.
