The Roosevelt Supper Club concept was born out of a group of Wimberley locals seeking to bring a whole new dining experience and the first-ever members-only club to the Wimberley scene. The Roosevelt Supper Club is founded by Culinary Director and Executive Chef Mark Grimes. Grimes brings unparalleled talent and experience to the table, with a 30-year career in the hospitality industry, spanning experience at 100 successful concepts in the United States and Europe.

After years of pursuing his passion for food and traveling the country working on one exciting concept after another, Mark finally put down his roots in Wimberley, Texas with his wife Kimmie. Grimes was an integral part of the opening team and culinary development of Wimberley’s Creekhouse Restaurant in 2021.

“When my Texan daughter Kimmie and I moved to Wimberley, we dreamed of bringing a Supper Club to our little piece of heaven,” Grimes says. “When you lived in the Midwest, Supper Clubs were our favorite places to dine, and we thought what a perfect fit Wimberley would be. We look forward to Supper Club being your place where friends gather to enjoy an amazing meal with a stiff drink and fine wine!”
