Cambridge Beaches Executive Chef Keith De Shields, in collaboration with Goslings Ltd, has just announced the opening of a new pop-up restaurant and new kitchen at Cambridge Beaches Resort & Spa.
“The temporary indoor-outdoor restaurant is called De Shields’ Bistro and will be open from November to March, serving dinner from 6:30 p.m. to 9:30 p.m.,” a spokesperson said.
A first of its kind in Bermuda, ‘Roots Cuisine’ is a contemporary, from scratch, diverse expression of Bermuda’s regional foods and flavors. Inspired by recipes handed down from generation to generation that reflect the influence of Bermuda, the Caribbean and Portugal.
“Chef De Shields has carefully crafted a vibrant multicultural menu where each dish has a story behind it, such as the paw picked from the chef’s garden for its baked paw with its bacon-banana flan with lamb loin bones from his Westover farm.
“I’m excited to create new flavors, inspired by my multicultural heritage,” said Chef Keith De Shields. “From freshly caught reef fish to a range of ingredients and traditions from the Caribbean and Portugal, there is such a wealth of inspiration to bring.”
A spokesperson added: “There will be several small plates like homemade Callaloo pasta with a Jamaican-style Ackee or you can try the Chef’s Hot Squeezed Oxtail Terrine with a poached crab leg in herb butter. . Large platters will include poached reef fish in coconut milk with brown butter, root vegetables or the house specialty, whole baked reef fish with Bermuda orange butter sauce.
Desserts take on an island theme with offerings such as Goslings Rum Baba with Whipped Orange and Burnt Pineapple, a robust spice cake with brown butter ice cream or a trio of fall berry cake with whole berries, homemade forest berries and freshly made strawberry sorbet. “
“For those looking for an enhanced dessert experience, we will offer a wine tasting trio with a selection of cheeses or a twice baked Roquefort soufflé with pear confit with Bermuda honey.”
“Throughout the menu you will notice several pairings with Goslings rum. I have been a fan of Goslings for years and I am inspired by the many synergies between my profession and the history of the brand. Our collaboration brings the brand’s values of craftsmanship, family and authenticity to life, alongside my history and the passions that drive my love for cooking, ”he said.
