Pop-up restaurant in Cambridge Ditches Tips, patrons


CAMBRIDGE, Mass. (WBZ NewsRadio) — You won’t need to tip if you eat at this restaurant in Cambridge.

McGuirk’s Folly is a pop-up seafood restaurant in the Middlesex Lounge that is experimenting with a new business model, which sees every employee, from waiters to dishwashers, paid equally. The restaurant has no owner or manager, and all employees are partners.

“I think we’re among the highest paid restaurant workers in town,” said Pierce Kelley of McGuirk’s Folly.

Since all employees are paid equally and tips and taxes are factored into the bill, McGuirk’s Folly customers do not need to tip their server.

“We’re never going to say no to somebody giving us extra money, who would,” Kelley said. “But at the same time, it’s not a ‘wink’, please tip us. Please don’t.”

At present, the pop-up is expected to run until the end of the month, but after a strong start to experience, Kelley said they may seek a permanent home for McGuirk’s Folly.

“This month is already a hit,” Kelley said.

At the moment, you can only eat at the restaurant with the purchase of a ticket. Tickets are available through open table.
